Summer days are upon us, and by that, we mean loooooong days of finding activities to do with your kids while their home on break. Trust us, we feel your pain! Our Snowcone Celebration and Rainbow Sprinkles prints were inspired by summer fun. So today, let's talk about five fun, frozen (and healthy) treats you can DIY with, or for, your little ones to keep them busy on a hot afternoon...

Healthy Bomb Pops by Against All Grain

Here's what you'll need:

  • Red Layer
    • 2 cups strawberries, halved and hulled
    • 1 cup raspberries
    • 2 tablespoons honey
    • 1 tablespoon lime juice
  • White Layer
    • 1 cup full-fat coconut milk
    • 3 tablespoons honey
    • 1 tablespoon lime juice
  • Blue Layer
    • 3 cups blueberries
    • 2 tablespoons lime juice

Here's what you'll do:

  1. Place all of the ingredients in the Red Layer in a high speed blender and puree until smooth. Strain through a fine mesh sieve into a bowl with a spout for easy pouring. Pour into popsicle molds. Place in freezer for 40 minutes until frozen.
  2. While the Red Layer is freezing, make your White Layer. Repeat steps: blend, strain, pour into molds, freeze 40 minutes
  3. While the White Layer is freezing, make your Blue Layer. Repeat steps: blend, strain, pour into molds. Add popsicle sticks here. Freeze 40 minutes

Frozen Banana Pops from The Frozen Moms

Here's what you'll need:

  • Bananas
  • Yogurt
  • Sprinkles
  • Wax or parchment paper
  • Popsicle sticks

Here's what you do:

  1. Peel the bananas and cut them in half
  2. Insert a popsicle stick into the flat bottom of each banana half.
  3. Dip your bananas in yogurt and use a spoon to cover the entire banana and smooth out the yogurt.
  4. Sprinkle the bananas with your choice of toppings.Place the dipped and decorated bananas onto a plate or baking sheet lined with wax or parchment paper and pop in the freezer for 2 hours.

Strawberry Yogurt Bark from Hello, Wonderful

Here's what you'll need:

  • Greek Yogurt
  • Dried Strawberries
  • Optional: nuts, blueberries, chocolate chips

Here's what you'll do:

  1. Line a pan (with sides) with parchment paper and spread evenly with yogurt, make sure it’s not too thin so that it breaks easily. I would say about 3/8 of an inch thick is good.
  2. Sprinkle with your mix-in (fruit, nuts, etc)
  3. Freeze for a few hours until completely frozen.
  4. Remove the frozen yogurt from the pan and peel off the parchment paper. Break into pieces.

Honey Lemonade Popsicles from Sugar & Charm

Here's what you'll need:

  • Honey
  • Fresh Squeezed Lemon Juice
  • Water
  • Popsicle Sticks
  • Popsicle Tray
  • Optional: Edible Flowers (not needed, but so cute!)

Here's what you'll do:

  1. Squeeze lemons to make 1 cup lemon juice
  2. In a small saucepan add honey and water and simmer until honey is reduced and melted
  3. In a container with a spout, add the lemon juice, honey water, and cold water
  4. Pour into popsicles molds and add edible flowers
  5. Place sticks in and freeze them overnight

Chocolate Peanut Butter Banana Bites from Nourished by Nutrition

Here's what you'll need:

  • 3 ripe bananas
  • ⅓ cup peanut or almond butter
  • ½ cup dark chocolate chips
  • 2 teaspoons coconut oil

Here's what you'll do:

  1. Line a baking sheet with parchment paper
  2. Peel and slice the bananas into ¼ inch thick rounds (40-60 slices). Set the banana slices on the baking sheets.
  3. Place ½ teaspoon of peanut butter on top of half of the banana slice, then place the remaining banana slice on top. You will have around 20-30 bites
  4. Freeze until frozen solid
  5. Add the chocolate and coconut oil to a microwave-safe bowl. Microwave for 1 minute, stir and microwave in additional 30 second increments, stirring after each interval until chocolate is completely melted.
  6. remove the frozen banana bites from the freezer. Dip the frozen banana bite into the melted chocolate so that half of the bite is coated
  7. Place the chocolate covered bite back on the baking sheet. Repeat with the remaining banana bites. Place the baking sheets back into the freezer to harder for about 15 minutes.
